Claire’s Kitchen is where we cook real food together. Every recipe in this series is something Claire actually eats, made with ingredients that support her gut health and feed the good bacteria we work hard to grow.

Claire is obsessed with blue, pink, and purple food. Not in a “she tolerates it” way. In a way where she will eat things she would otherwise refuse if they are the right color. We figured out early on that beetroot powder and blue spirulina were the fastest way to get gut-supporting ingredients into her daily routine without a single argument at the table.

Unicorn Yogurt is the recipe that started it all. Five ingredients, no measuring required, and Claire asks for it by name.

Why these ingredients support gut health

Every ingredient in this recipe pulls its weight.

Fage 5% Greek yogurt is a fermented food that delivers live active cultures directly to the gut. The higher fat content also supports nutrient absorption, which matters for kids whose gut lining is still developing. If your child is dairy-sensitive, A2 whole milk yogurt is a good alternative. It contains only the A2 beta-casein protein and is easier for many kids to digest.

SunLab Organic Beetroot Powder is where the pink comes from. A 2022 pilot study found that beetroot consumption produced measurable changes in the human gut microbiome after just three days, with researchers observing increased short-chain fatty acid production that may support gut barrier function and intestinal immune health.

Incas by Asiya Life Organic Blue Spirulina Powder handles the blue and the purple when the two powders combine. A 2024 review in Critical Reviews in Food Science and Nutrition found that spirulina can improve both the function and composition of the gut microbiota. A separate study found that spirulina promoted growth of beneficial Lactobacillus and Bifidobacterium bacteria, two of the strains we specifically work to support in Claire’s gut. If you want to read more about how we identified exactly which strains Claire needed, that story starts with her gut test.

Local raw honey adds a drizzle of natural sweetness and acts as a gentle prebiotic. Research published in Frontiers in Nutrition found that certain kinds of honey can reduce harmful bacteria in the gut while supporting the growth of beneficial Lactobacillus and Bifidobacteria species. We use local raw honey specifically because minimal processing preserves the oligosaccharides that feed good bacteria. One important note: raw honey is not safe for children under 12 months. For toddlers over one year it is generally considered safe, and always check with your pediatrician if you have any questions.

The Watkins dye-free sprinkles are purely for joy. Claire is two. Joy is a legitimate ingredient.

The color science

This is genuinely a science experiment. Beetroot powder produces pink and magenta tones. Blue spirulina produces blue. Mixed together in yogurt they create purple. The exact shade depends on how much of each you use, which means every bowl is different. Claire finds this endlessly exciting. We call it the science experiment she gets to eat.

Unicorn Yogurt

A gut-friendly toddler yogurt made with beetroot powder and blue spirulina. Five ingredients, no measuring required, and Claire asks for it by name.
Prep Time 5 minutes
Cook Time 0 minutes
Servings: 1

Ingredients

  • 3/4 Cup Fage 5% Greek yogurt or A2 whole milk yogurt
  • 1/4 tsp SunLab Organic Beetroot Powder
  • 1/8 tsp Incas by Asiya Life Organic Blue Spirulina Powder
  • 1 tsp local raw honey
  • A Few Shakes Watkins dye-free rainbow sprinkles

Method

  1. Step 1: Spoon the yogurt into a bowl.
  2. Step 2: Add the beetroot powder and blue spirulina. Do not mix yet.
  3. Step 3: Swirl gently with a spoon. Full mixing gives you purple. A partial swirl gives you pink and blue marble. Claire prefers the marble.
  4. Step 4: Drizzle honey over the top.
  5. 5: Finish with the sprinkles.

Notes

Raw honey is not safe for children under 12 months. For the marble effect, swirl rather than stir. More beetroot powder gives you deeper pink and purple. More spirulina gives you blue. Every bowl is different and that is the point.
